Holiday Recipes to Warm the Soul

With winter fast approaching and Jack Frost ready to grind his teeth into fresh noses, it is simply best to get into the swing of things with two delicious recipes crafted to sooth the numbest of fingers.
Even when you are living on campus, every residence hall has a kitchen where you can prepare hot food to warm your chilly body.
These are also perfect to use in family get-togethers, holiday gatherings, family game nights, and simply when you feel like having a warm, delicious meal.

Broccoli Cheese Noodle Soup
2 Tbsp Vegetable Oil
6 C. Chicken broth
8 Oz. fine egg noodles
2-10 oz. pkg frozen chopped broccoli
1/8 tsp garlic powder
1 lb. white American cheese
3/4 c. chopped onion
1 tsp salt
6 C. Whole milk
Pepper to taste
Heat oil in large soup pot. Add onion and cook over medium heat for 3 minutes. Add chicken broth and heat to boiling. Gradually add noodles and salt. Cook uncovered for 3 minutes, stirring occasionally. Stir in broccoli & garlic powder. Cook 4 minutes. Add milk, Cubed cheese & pepper. Stir constantly until cheese melts. Serve hot.

Amy’s Amazing Apple Crisp
1 1/2 cups brown sugar
1 1/2 Cups flour
1 1/2 Sticks of cold butter cut into pieces
8-10 apples peeled and sliced.
Toss the apples with 1/4 brown sugar, 1/2 tsp cinnamon and 1/4 tsp nutmeg. Then combine the brown sugar, flour and butter. Work with your fingers until it becomes like little pebbles, pour over apples and bake at 350 for an hour…or until it turns brown and the juices look caramelized.
