While most of us are looking towards spring we still have a few cold blustery days to encounter before spring is actually here. I wanted to know, what are some favorite dishes we look forward to having when the weather turns cold?

Dr. Katherine Harrington who teaches in the Language and Linguistics department said, “I make a veal stew that is my son’s favorite. The original recipe is my mother-in-law’s and I now make it for my family. It is something my whole family looks forward to once the brisk weather hits.”

Student Hannah Andus likes to cook every Sunday. She eats a Paleo diet, which means she uses all natural ingredients. One of her favorite dishes to make, once the weather, turns crisp is Chili. Hannah loves to cook and pass recipes and information on to her friends and she has a blog at: soulfoodinktrails.wordpress.com. Another student Brittany Faulkner looks forward to her dad’s Shepard’s Pie. “I look forward to it every winter and although I haven’t tried to make it myself yet, I plan on attempting it one day. It is my big warm winter dish!”

Mark Flynn, a teaching lecturer in the English Department, says he just started experimenting with cooking. “Chili, it’s dense and hot. I like to take any vegetables that I have in the refrigerator and add some meat to it. I try to make sure it’s a healthy dish. It’s also something I like to order out because everyone makes it differently and it is usually affordable. When I make it, I make a batch so I can have two or three leftover servings that I can freeze and have for the next two or three weeks.”

Molly Ricker, another student favors her mother's “Onion Soup with melted American cheese. It is a favorite and I think my mother makes it for me because she knows I love smelling it while it’s cooking. I look forward to having it when the weather turns bleak.”

Student Colby Chase loves his mother's “Spicy Enchiladas with rice pilaf. It is a favorite meal that I look forward to having each and every year when the weather turns cold.”

When I asked student Shannan Roberts she didn’t have to take time to think about it, “My stepmom’s homemade Apple Crisp. When I think about fall, I think about apple picking and we always have plenty of apples. I think we usually have enough to make it to Thanksgiving, and having plenty of apples means she will make apple crisp.”

As I perused campus, I wondered what someone who works in the industry might like. Monica Dupree usually works the food station at the Union Grille. In her position she usually makes the pizza and pasta among other things. “A hot bowl of soup with a grilled cheese sandwich is something I look forward to making and eating when the weather turns cool.”

We all have our seasonal favorites, whether we make them or someone else makes them, and the favorites seem to be as varied as we are.
