Take that extra five minutes in the morning to have a bowl of cereal and a glass of Orange Juice. According to the American Institute for Preventative Medicine breakfast can be successful in helping students obtain better grades. Published in Healthy Life, Student’s Self-Care Guide, “Starting the day with breakfast is the key to learning. People who eat breakfast perform better on cognitive tests, have better verbal fluency, and increased memory.”
Here are some recipes to entice those who skip breakfast to start the day off right.
40-Second OmeletMakes 1 serving
• 2 eggs • 2 tablespoons water • 1 tablespoon butter — or 1 teaspoon oil Beat together eggs and water until blended. In a 10-inch omelet pan heat butter until just hot enough to sizzle a drop of water. Pour in egg mixture.
Mixture should set immediately at edges. With an inverted pancake turner, carefully push cooked portions at edges toward center so uncooked portions can reach hot pan surface, tilting pan and moving as necessary. Continue until the egg is set and will not flow.
Fill the omelet with 1/2 cup of desired mixture. With a pancake turner, fold omelet in half. Invert onto plate and serve immediately.
Granola Fruit KabobsMakes 4 servings
• 2 cups granola • 2 medium apples — chunked • 2 medium bananas — chunked • 1 cup fresh pineapple chunks • 1 cup vanilla or fruit flavored yogurt Place granola in shallow bowl. Toss fruit with a small amount of lemon juice to deter browning. Insert toothpicks into each piece of fruit. To serve, dip fruit in yogurt, coat all sides. Roll in granola.
Cranberry Coffee CakeMakes 8 servings
• 3 cups fresh cranberries (frozen and thawed cranberries work – but fresh is much better) • 2 cups sugar • 1 and 1/2 cups all-purpose flour • 1 cup finely chopped walnuts • 1 cup light cream • 3/4 cup butter – softened • 3 large eggs – lightly beaten • 1 additional Tablespoon sugar • 1 teaspoon cinnamon • 1 teaspoon vanilla • 1 teaspoon baking powder • 1/2 teaspoon salt Preheat oven to 350 degrees.
Prepare a 9-inch baking pan with a generous coating of Crisco or cooking spray.
In a medium bowl, combine cranberries, 1 cup of the sugar and all the nuts. Add to prepared pan.
In a small bowl, combine the remaining sugar, cream, eggs, butter and vanilla. Mix well.
In a large bowl, sift flour, baking powder and salt. Add contents of small bowl to the large bowl and mix well.
Drop batter over ingredients in prepared pan and smooth with a spoon or spatula.
Sprinkle the additional Tablespoon of sugar and the cinnamon on top of the batter.
Bake for 45 to 50 minutes until a toothpick inserted into the center comes out batter-free.
