Hello one and all and welcome back from spring break. By the way I hate you all because you are all tan and my skin still resembles the pasty color of chicken flesh. Speaking of, this weeks recipe includes our favorite clucking friend. Continuing our strive for excellence the Editor in Chief’s mom came through with her famous chicken dish. So strap on the feed bag and warm up those utensils.
Baked Chicken Reuben
Ingredients:
4 whole broiler-fryer chicken breasts, halved and boned
(Or 4 Boneless Breast of Chicken)
1/4 tsp. salt
1/8 tsp pepper
l can (l6oz.) sauerkraut, drained (press out excess liquid)
4 slices (each 4×6 “) natural Swiss Cheese
l 1/4 cups bottled Thousand Island salad dressing
1 TBL chopped parsley
Directions:
To begin with place your chicken breasts in a greased baking pan, and sprinkle with salt and pepper to your own liking.
Next place (what has to be gods favorite vegetable) sauerkraut over the chicken. To complete your preparations top the breasts with Swiss cheese and pour the dressing evenly over the cheese.
Finish by covering the entire pan with foil and bake in a 325 degree oven for about 1 1/2 hours or until a fork can be inserted in chicken with ease. Sprinkle with chopped parsley to serve.
Servings 4
In my opinion the perfect addition to this plate would be a side of broccoli and perhaps baked potatoes or a thick Italian bread.
